Make it this weekend: Apple Muffins

Breakfast is one of my favorite meals of the day. I love nothing more than starting my day off with a healthy solid breakfast. Sadly, most mornings are spent rushing to get everyone dressed and out the door, and breakfast usually ends up being grab-and-go around my house. To combat this, I usually spend my weekend making things that are easy to wrap up and take with me to the office.

I’m usually a blueberry muffin kind of gal, but the thought of running out and buying blueberries out of season kind of gives me the heebee jeebees! I’m not going to lie — paying $4.00 for a pint of sour, dull berries is not fun to me. Some great substitutes for muffins during the winter months are apples, bananas and pumpkin. Of these, apple is by far my favorite.

These apple muffins are often the highlight of my Monday morning. They are moist and full of flavor, and a perfect and healthy way to start any busy week, for all members of the family.

Apple Muffins

{ingredients}
1 C AP flour
1 C whole wheat pastry flour
1 tsp baking soda
1/2 tsp salt
1 stick butter, softened
1 C apple sauce
1 apple, peeled and grated
1/2 C granulated sugar
1/2 C brown sugar
2 eggs
1 tsp vanilla
1 tsp cinnamon
1/2 C chopped nuts

{directions}
Preheat oven to 350*.
Spray muffin tin.
In a medium bowl combine flours, baking soda and salt.
In a separate bowl cream together butter, sugar.
Add in eggs one at a time.
Add in vanilla.
Slowly mix in flour mixture.
Fold in apple sauce, apples, cinnamon and chopped nuts.
Fill muffin tins 3/4 way up and bake for 15-18 minutes, or until a toothpick comes out clean.
